Remaking an old favorite
Aug. 28th, 2022 09:45 pmI made a Mexican quiche with refried beans, chorizo, tomatoes, chiles and cheese. I've made this a few times in the past and found the filling didn't always fit in the crust. I only used half as much refried beans this time; just a little of the filling spilled out. Next time, I'll just split the filling between two crusts.
I had a few more thoughts I wanted to put here, but I'll wait until next week so I don't end this week on a down note.
